One vegetable that I feel like can totally be transformed
with very few ingredients is broccoli.
My husband isn't a huge fan, but he loves it roasted.
And one great thing is, this is super simple.
I like to do this with just one head of broccoli.
Cut the stems off, once the stems are gone, you
can keep them and put them in veggie stock,
or you can toss them, your choice.
You can cut a lot of the stem off or keep some on.
Once the stem is chopped off, go ahead and divide each of the
florets into individual florets.
Make sure you give them a good rinse with some water.
Once divided and rinsed off place them into a clean bowl.
Coat them with olive oil, not too much, but not too little.
Season to taste with salt, pepper, and garlic powder. Yes that it is!
Now, line a small baking dish with none stick aluminum foil.
Throw the broccoli into the pan and into an oven preheated at 375 to 400.
Bake or roast rather for 25-30 minutes, flipping them occasionally.
And here is the finished broccoli. This is super easy and a great way
to get some vegetables into that person that may not be
a big fan of veggies. These can be cooked longer or shorter as well,
all depending upon how tender you like your veggies!
