Ceasar Dressing

There are some nights the husband and I (yes I call him the husband, only because he calls me the wife :p) plan on doing something for dinner, initially, but by the time dinner rolls around, we aren't in the mood for it. So what does any rational person do when they have no idea what to prepare for dinner?!?!?! Yes! You guessed it! 10 points if you guessed, drive to Walmart! . . . at 11 pm in the evening, an hour away. (Thanks NJ for being such a rural area).

So tonight, we really had no idea what to make, and while walking around in Walmart, passing the produce, I suddenly had a craving for salad! What goes best with salad though? Steak. Yes, steak, so there we had it. steak, mashed potatoes, and salad. I really wanted a Caesar salad, and my husband, Chris, as you will come to know him as, suggested that we prepare our own homemade dressing, which we have always wanted to do, but just never did. Well, we looked up a recipe on our phone while in Walmart, and this is the one we used as a guide.  http://allrecipes.com/recipe/caesar-salad-supreme/  We picked up all the necessary ingredients, however, we didn't follow the recipe as directed.
 
Not going to lie, we were just a little nervous to make it, me more so then him I believe.  So we measured out 3 cloves of garlic, mince that up, nice and small.  We used 3/4 cup of mayonnaise,  2 tablespoons of grated parmesan cheese, 1 teaspoon Worcestershire sauce, 1 teaspoon of Dijon mustard, a tablespoon of lemon juice, one anchovy filet minced up very small,  seasoned with salt and pepper to taste, and mixed up well with a spatula. 
 
Warning anchovy's will smell.... awful! And your kitty will come running. 
 
 
 
And this is how it looked.
We allowed the dressing to chill in the refrigerator for about 30 minutes.
 
We just used store bought croutons and romaine lettuce.
 
However, to amp up this salad, it would be amazing with homemade croutons, as well as instead of grated parmesan, with a nice block of freshly shaved parmesan. To home-make croutons, you would choose a nice bread of your liking, let it age a bit, chop it into good size cubes, and coat with light olive oil with salt and pepper to taste, a bit of garlic, and some cheese. It would come out perfect! We were just testing the water out a bit with the dressing to start.
 
 
And now, mixing the dressing into the salad after allowing it to chill. I cheated, and dipped a crouton into the dressing before we mixed it... and may I say....

It
was
AMAZING!
 
This is the best dressing I have ever tasted, so fresh, so simple. I never want to buy bottled Caesar dressing ever again.  This was such an easy, quick, simple recipe, and so damn satisfying.
 
 
 
And here we go, the finished salad. A little fresh pepper on top and a sprinkle more of cheese, because cheese is spectacular.
 
 
 
 
Full recipe:
 
 
ingredients:
 
3 cloves fresh garlic
3/4 Cup mayonnaise
1 anchovy fish filet
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
1 tablespoon lemon juice
2 tablespoons parmesan cheese
Salt and Pepper to taste
 
 
Mince garlic and anchovy, very small pieces. Mix the mayonnaise, Dijon, Worcestershire, and lemon juice together. Fold in anchovy filet, parmesan, and minced garlic. Season with salt and pepper to taste, keeping in mind the anchovy does add a good amount of salt. After well mixed, allow to chill in the refrigerator for approximately 30 minutes. After chilled toss salad with  desired amount of dressing and croutons, top off with more cheese, fresh pepper, and enjoy to your hearts content.

  1. This is awesome! I love being able to make a dressing, and then use it all up in one or two sittings. I don't like having a million bottles in my fridge. We are totally going to try this next week!

  2. Thanks Tori! The amount of this dressing was perfect for the entire bag of lettuce! We like extra dressing, but it was just the right amount. I am the same way, I hate when there are a ton of bottles laying around. Hope y'all enjoy the recipe if you make it!
